Although the wing stall is INSANELY exaggerated for the DCS Mustang, you can still enjoy dog fighting against lower levels of AI. This here kraut was set to "good", which means he's just one notch above the lowest. And if you go higher on the AI, it will begin to cheat (=engine on crack, pilot and aircraft break the laws of physics etc). So I'm sticking to this for now.
