Light sponge with a punchy coffee flavour and a sweet, simple icing. It won't win any WI awards, but it'll make your mates happy with a cuppa. It's hard not to LOVE a coffee and walnut cake, but sometimes you can't be faffed to wait for the baking time. Enter the modern age hero... the microwave. These recipes have been a bit hit and miss and despite the horrendous appearance of it, this is actually a very clever little recipe.
