Answered: Personalized Sous Vide Burgers | What’s Your Preferred Doneness? As cooks we all want to be great in the kitchen. Offering amazing food that’s colorful and full of great texture. Sous Vide cooking it right up there with the best fine dining restaurants when it comes to high end cooking. The day I ate my first sous vide burger I was really impressed with the texture. My personal favorite is sharing the experience with those that have never enjoyed.

If your looking to make the very best sous vide burger you can I suggest grinding your own meat. If that sounds like a hard task, it really isn’t as you’ll see in our video above. #grindingmeat
The grinding of your own beef opens the door to creative beef combinations.

Here’s an example of a beef blend recipe:
½ Chuck Roast 80%(meat) to 20%(fat)
¼ Round Brisket
¼ Sirloin

Each cut of beef listed above has its place in the recipe and serious unique flavor.

For the sous vide burger in the video I used Sirloin Flap aka Bavette.
If that sounds new to you, it is to most people. That’s the fun part. New flavor. And Sirloin is known for the big flavor it brings. So Good!

What Does Sous Vide Mean?
“Under Vacuum” it’s french...

Two ways to cook Sous Vide:
In a controlled water bath, dialed into the exact temperature your wanting the finished food to reach. The temperature can never exceed that temperature resulting in consistent cooking.
Using quality oil to poach your protein in. Think about a heat safe container filled with olive oil.
Example: Set the temperature to 130, place some filet mignons into the oil and set your timer. The filet mignons will come out perfectly cooked to medium rare to medium

Two ways to prepare your beef for Sous Vide cooking:
Professional kitchens use a vacuum sealer. Which works great most of the time.
Using ziplock bags. You have two choices, small sandwich bags and larger ones to add larger cuts of meat.
